Green Shakshuka

Green Shakshuka is a combination of green vegetables, which replace the traditional shakshuka recipe with tomato sauce and red bell pepper. It is a perfect combination for breakfast, brunch or even lunch.

  • 1 zucchini
  • 1 cup frozen peas
  • 100 g spinach
  • 1 yellow onion
  • 2 green onions
  • 2 garlic gloves
  • 4 eggs
  • 1/2 tsp cumin
  • 1/2 tsp sweet paprika
  • salt, pepper to taste
  • 2 tbsp olive oil
  • parsley
  • 50 g cheese


  • Shave the zucchini and let it drain in a sieve.
  • Chop onion, green onions spinach and garlic.
  • In a pan, heat 2 tablespoons of oil, add the onion and let it cook until it becomes translucent.
  • Squeeze the zucchini well and add it to the pan. Let it cook for 4-5 minutes and stir continuously. Then add the frozen peas and let them cook together for another 5 minutes.
  • Add the shopped spinach and stir until soft. Add the spices and let it cook for a few more minutes on low heat.
  • Create 4 small wells in the composition, and break the eggs into each one.
  • Cook until the eggs are made to your liking. In this step, you can put a lid or leave it in the oven for a few minutes until cooked.
