Peach halloumi salad

Do you love peaches? Are you tempted by halloumi? How about a easy summer salad, in which to combine the two ingredients? Easy to make, super tasty and without too many ingredients, I guarantee it's worth a try.

  • 1 piece of halloumi
  • 1-2 peaches
  • handful of spinach
  • 1/2 red/white onion
  • 4-5 cherry tomatoes
  • the juice of half a lemon
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar optional
  • salt
  • pepper
  • mix of seeds


  • Slice halloumi and let it drain well or wipe it with kitchen towels to remove excess water.
  • Wash the peaches and cut them into slices of about 0.5 cm.
  • Grease a grill pan with olive oil and add halloumi. Cook on both sides until the halloumi becomes slightly crispy.
  • After the halloumi is ready, add the peaches into the pan. I also chose to bake the peaches, but you can leave them fresh if you like it.
  • In a bowl add the spinach, diced cherry tomatoes, onions.
  • In a small bowl or in a glass prepare the dressing: mix the oil, lemon juice, balsamic vinegar (if you choose to put), salt and pepper to taste. Pour everything over the salad and mix.
  • Add halloumi, peaches and seeds and serve hot with croutons or plain!
