Supa crema de dovleac/Pumpkin Soup

Toamna isi intra tot mai mult in drepturi, iar gradele de afara nu mai sunt deloc atat de mari. Iar eu simt tot mai mult nevoie de mancaruri calde, care sa ma incalzeasca, asa ca ce poate sa imi vina cel mai mult in ajutor, daca nu o supa crema, de aceasta data de dovleac.

Un pic condimentata de la ghimbir si boia, aceasta supa este atat de cremoasa, asta si datorita laptelui de cocos care a ajutat la crearea consistentei sale. Este perfecta servita cu crutoane si cu seminte de dovleac, prajite in casa, chiar de la dovleacul pe care l-am pregatit.

Ingredients

  • 650 g dovleac
  • 2 morcovi medii
  • 1 ardei gras rosu
  • 1 ceapa
  • 1/2 lingurita sare
  • 1/3 lingurita piper
  • 1/3 lingurita boia dulce
  • 1/4 lingurita ghimbir
  • 1/2 lingurita rozmarin sau 3 frunze fresh daca aveti
  • 1/2 lingurita oregano
  • 3 linguri ulei de masline
  • 350 ml supa de legume eu folosesc 1 cub vegetal pe care il dizolv in 600-700 ml de apa
  • 70 ml lapte de cocos
  • seminte de dovleac optional

Instructions

  • Preincalzim cuptorul la 180 grade Celsius.
  • Taiem legumele cubulete, le condimentam si asezonam cu ulei de masline. Le punem intr-o tava pe hartie de copt si dam la cuptor pentru 50 de minute, pana legumele devin moi.
  • Intr-o cratita punem apa la fiert si un cubulet de legume. *
  • Scoatem legumele de la cuptor si le punem intr-o oala. Adaugam supa de legume si cu ajutorul unui blender mixam pana devine cremoasa.
  • Adaugam laptele de cocos si continuam sa mixam. Dupa preferinte, putem sa mai adaugam sare, piper.
    La nevoie puteti sa mai adaugati supa/lapte daca simtiti ca este prea groasa, pentru a ajunge la consistenta dorita.
  • Semintele de dovleac se curata bine de pulpa, se spala si se pun pe un sevetel de bucatarie pentru a absoarbe apa foarte, foarte bine. Cu cat sunt mai uscate, cu atat mai crocante vor iesi. Se condimenteaza dupa preferinte sau se pun simple in tava de cuptor. Le lasam 15 minute.
  • Serviti supa calda, cu crutoane si semintele pregatite.

Notes

*Daca aveti supa deja cumparata sau pregatita de voi in prealabil, o puteti folosi pentru supa.
**Restul de supa ramasa il puteti pastra la frigider sau congela si refolosi pentru alte supe.

Ingredients

  • 650 g pumpkin
  • 2 medium carrots
  • 1 red bell pepper
  • 1 onion
  • 1/2 tsp salt
  • 1/3 tsp pepper
  • 1/3 tsp sweet paprika
  • 1/4 tsp ginger
  • 1/2 tsp rosemary
  • 1/2 tsp oregano
  • 3 tbsp olive oil
  • 350 ml vegetable soup I used 1 vegetable cube which I dissolved it in the amount of water
  • 70 ml coconut milk
  • pumkin seeds optional

Instructions

  • Preheat the oven to 180 degrees Celsius.
  • Cut the vegetables into cubes, season and add 3 tbsp of oil. Place them to a baking tray and bake for 50 minutes, until the vegetables are soft.
  • In a saucepan put water and add a cube of vegetables soup to dissolve.*
  • Remove the vegetables from the oven and put them in a pot. Add the vegetable soup and mix with a blender until creamy.
  • Add the coconut milk and continue mixing. According to your preferences, you can add more salt and pepper.
    If necessary, you can add more soup / milk if you feel it is too thick to reach the desired consistency.
  • Pumpkin seeds are well cleaned of the pulp, washed and placed on a kitchen towel to absorb water very well. The drier they are, the crispier they will come out. Season to taste or add simple in the tray. Leave them for 15 minutes in the oven.
  • Serve your soup hot with croutons and the prepared seeds.

Notes

* If you have soup already bought or prepared by you in advance, you can use it for soup.
** You can keep the rest of the remaining soup in the fridge or freeze and reuse for other soups.
