Salata de kale cu mar, zucchini si cartofi copti

In ultima perioada am pregatit ori pentru pranz, ori pentru cina, tot felul de salate, asa ca am ales unele care sa fie nu doar usor de facut, ci sa fie si gustoase si satioase, si astfel am incercat sa combin ingrediente care imi plac si le fac consistente.

Va las si voua aceasta combinatie ce contine ingrediente de sezon, super colorate si gustoase si cu nutrienti necesari pentru a avea un pranz satios si delicios.

Ingredients

  • 6-7 frunze kale
  • o mana spanac
  • 2 castraveti
  • 4 rosii cherry
  • 1 mar
  • 1/2 zucchini
  • 3 cartofi medii
  • 1/2 avocado
  • sucul de la o lamaie
  • 5 linguri ulei de masline
  • sare, piper, boia dulce dupa gust
  • 1 lingurita seminte optional

Instructions

  • Preincalzim cuptorul la 180 de grade Celsius.
  • Taiem zucchini si cartofii felii rotunde. Ii ungem cu 2 linguri ulei de masline, sare, piper si boia. Ii dam la cuptor pentru aproximativ 30-35 minute. La jumatatea timpului ii mai invartim pentru a se rumeni pe ambele parti.
  • Salata kale se curata de lujeri si nervuri, si se toaca marunt (dupa preferinte). Masam cu o lingura de ulei de masline si 1/2 lingurita de sare. Rosiile cherry si castravetele se taie cubulete, marul felii subtiri.
  • Pregatim un bol in care punem kale, spanacul, rosiile cherry si castravetele. Pregatim un dressing din sucul de lamaie, 3 linguri de ulei de masline, sare si piper pe care il adaugam peste salata. Amestecam bine.
  • Adaugam deasupra cartofii, zucchini, marul si semintele (daca folositi). Servim cald simplu sau cu crutoane.
    Daca preferati, puteti servi cu iaurt.

Ingredients

  • 6-7 kale leaves
  • a handful of spinach
  • 2 cucumbers
  • 4 cherry tomatoes
  • 1 apple
  • 1/2 zucchini
  • 3 medium potatoes
  • 1/2 avocado
  • 1 lemoin juice
  • 5 tbsp olive oil
  • salt, pepper, sweet paprika to taste
  • 1 tsp seeds optional
  • yogurt optional

Instructions

  • Preheat the oven to 180 degrees Celsius.
  • Cut zucchini and potatoes into round slices. Grease them with 2 tablespoons of olive oil, salt, pepper and sweet paprika. Bake for about 30-35 minutes. Halfway through, turn them to cook on both sides.
  • Clean kale leaves of vines and ribs, and finely chop (as you prefer). Massage with a tablespoon of olive oil and 1/2 teaspoon of salt. Cherry tomatoes and cucumbers cut into cubes, apple into thin slices.
  • Prepare a bowl in which you add kale, spinach, cherry tomatoes and cucumbers. Prepare a dressing from lemon juice, 3 tablespoons of olive oil, salt and pepper that add over the salad. Mix well.
  • Add the potatoes, zucchini, apple and seeds on top (if using). Serve hot, simply or with croutons.
    If you prefer, you can serve it with yogurt.
