Super gustoasa, usor umeda, cu bucati de ciocolata si glazura de unt si vanilie aceasta banana bread cu zucchini este super aromata si iti va satisface sigur papilele gustative.

Am ales sa fac o reteta cu gust intens de ciocolata, asa ca am pus si cacao si ciocolata, insa puteti omite, atat cacaoa, cat si ciocolata, depinde si de gustul vostru, insa eu zic ca merita. 🙂 De asemenea, nu contine zahar, ci doar miere si gustul este destul de dulce. Ce este important la aceasta reteta, este sa lasati zucchini la scurs foarte bine inainte si va asigurati ca il veti stoarce cu mana sau cu ajutorul unui prosop de bucatarie. Am indulcit zucchini cu o lingura de zahar brun ce a ajutat si la eliminarea excesului de apa.

Ingredients

  • 180 g faina
  • 30 g cacao
  • 1 lingurita praf de copt
  • 1/2 lingurita sare
  • 1/2 lingurita bicarbonat de sodiu
  • 2 banane coapte si pisate
  • 1 ou la temperatura camerei
  • 1/2 zucchini mediu ras si scurs
  • 1 lingura zahar brun optional
  • 80 g ulei de cocos
  • 80 g miere
  • 1 lingurita esenta de vanilie
  • 80 g iaurt grecesc
  • ciocolata neagra tocata

Pentru glazura

  • 120 g unt la temperatura camerei
  • 3 cani zahar pudra
  • 1 lingurita esenta de vanilie
  • 2 linguri lapte la alegere

Instructions

  • Preincalzim cuptorul la 180 de grade Celsius, caldura sus jos. Pregatim o tava cu hartie de copt.
  • Radem zucchini pe care il punem intr-o sita, impreuna cu o lingura de zahar, deasupra unui bol. Lasam la scurs aproximativ jumatate de ora.
  • Intr-un bol cernem faina, cacaoa, praful de copt, bicarbonatul de sodiu si sarea. Lasam deoparte.
  • Intr-un bol mai mare pasam bananele, adaugam oul, uleiul de cocos, mierea, vanilia si amestecam sa incorporam.
  • Stoarcem bine zucchini si il adaugam peste amestecul de banane.
  • Turnam usor jumatate din faina peste bolul cu amestecul de banane si zucchini. Adaugam iaurtul si amestecam. Turnam si cealalta jumatate si incorporam.
  • Tocam ciocolata pe care o adaugam in compozitie.
  • Dam la cuptorul preincalzit pentru aproximativ 50-60 de minute. Textura ei trebuie sa fie usor umeda in momentul in care faceti testul cu scobitoarea.

Pentru glazura

  • Intr-un bol mixam untul cu zaharul pudra pana se omogenizeaza. Adaugam esenta de vanilie si cele doua linguri de lapte si mai mixam pana obtinem o textura cremoasa.
  • Dupa ce banana bread se raceste, adaugam glazura si ornam cu ciocolata rasa.

Ingredients

  • 180 g all purpose flour
  • 30 g cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 mashed bananas
  • 1 egg at room temperature
  • 1/2 of medium zucchini
  • 1 tbsp brown sugar optional
  • 80 g coconut oil
  • 80 g honey
  • 1 tsp vanilla essence
  • 80 g Greek yogurt
  • dark chocolate chopped

For frosting (buttercream)

  • 120 g butter at room temperature
  • 3 cups powdered sugar
  • 1 tsp vanilla essence
  • 2 tbsp milk of choice

Instructions

  • Preheat the oven to 180 degrees Celsius, heat up and down. Prepare a tray with baking paper.
  • Grate zucchini and put it in a sieve, together with a spoonful of sugar, on top of a bowl. Leave for about half an hour.
  • In a bowl sift flour, cocoa, baking powder, baking soda and salt. Set it aside
  • In a larger bowl mash the bananas, add the egg, coconut oil, honey, vanilla and stir to incorporate.
  • Squeeze the zucchini very well and add it over the banana mixture.
  • Lightly pour half of the flour over the bowl with the banana and zucchini mixture. Add the yogurt and mix. Pour the other half and incorporate.
  • Chop the chocolate and add it to the composition.
  • Bake in the preheated oven for about 50-60 minutes. Its texture should be slightly moist when you do the toothpick test.

For frosting (buttercream):

  • In a bowl, mix the butter with the powdered sugar until smooth. Add the vanilla essence and the two tablespoons of milk and mix until you get a creamy texture.
  • After the banana bread cools down, add the frosting and garnish with grated chocolate.
